For the woman on the go, sometimes you don’t have time to plan, especially for your meals.
While it’s OK to indulge in a little fast-food pleasure, you should avoid the dollar menu and invest in meals that matter.
Even with short breaks between jobs and other more-than-entertaining distractions, the busiest of people can prepare a good dinner, and a healthy one, at that.
For the next few days, I’ll be posting a few fast food recipes that don’t require a drive-thru menu and are inexpensive—a big plus!
I call them my minute meals on the go.
15-MINUTE MICROWAVE LASAGNA
Ingredients
• 2/3 cup dry mini lasagna pasta
• 2 cups water
• 1/2 cup tomato pasta sauce
• 1/3 cup cottage cheese
• 1/4 cup mozzarella cheese
• Seasoning to taste
Instructions
1. Add pasta and water to medium-size bowl.
2. Microwave pasta for eight to 10 minutes. Do not overcook.
3. Drain water from pasta.
4. Add layer of tomato sauce to pasta. Feel free to sprinkle a pinch of salt, pepper or oregano to taste. Then, follow with cottage cheese and a layer of mozzarella cheese.
5. Microwave dish for three minutes. Cool down and enjoy.
Tips
• Feel free to add cooked hamburger meat or other spices to recipe. I traditionally cook this all in a 2-cup size bowl.
• If you cannot find mini lasagna pasta noodles, substitute it with your pasta of choice.
