I’ve been exploring recipes in my Instant Pot lately, and I think this may be my favorite version of one of my favorite dishes: beef pepper steak. My mom would make this for us growing up an it’s always been my favorite.
Ingredients:
1 pound of stir fry beef or beef stew meat. I usually buy what’s on sale. Whatever works for you.
2 roma tomatoes, quartered
3/4 cup water
1 Tbsp soy sauce
1 Tbsp. canola oil
2 bell peppers, sliced
1 small onion, sliced
2 tsp. minced garlic
4 Tbsp. soy sauce
1/4 tsp. ginger powder
2 Tbsp. cornstarch
Directions:
1. Place beef, tomatoes, water and 1Tbsp soy sauce in Instant Pot. Cook on the pressure cooker setting for 20 minutes. When finished, let set for a few minutes and do an instant release. Or, you can let it naturally release if you want even more tender meat.
2. Pour your meat and juice into a bowl.
3. In the Instant Pot, turn on your setting to saute. Add oil, garlic and onions. Let cook until onions are translucent. Add bell peppers and cook for a few minutes. Then, add your meat and juice into the pot.
4. Mix your remaining soy sauce, ginger and cornstarch into a small bowl. Add to the pot and stir. Let it cook for a bit until the sauce thickens.
Serve over rice.
I’d personally like to add even more tomatoes to this mix, but this recipe pleases more people. You can also sweeten you sauce by adding a little brown sugar or Hoisin sauce, if you’d like. I don’t think it’s needed, though.
Don’t have an Instant Pot? No worries. It’s equally good on the stove. Instead, start by cooking your meat on the stove with a little bit of oil. Then, add the onions, garlic, bell peppers, tomatoes, and etc. It’s just about switching that first step to the stovetop.
