I adapted this recipe from a couple of recipes I found online. I will say that I like to use less oil in my quick breads, so I often substitute a bit of applesauce in the recipe. In this case, I added some extra pears, though, and added a little bit of apple juice to give it the right consistency. It came out nice.
Ingredients
3/4 c. sugar
1 egg
1/2 c. vegetable oil
1 c. chopped ripe pears, peeled & cored
1/2 c. chopped pecans (optional)
1 tsp. vanilla
1.5 c. flour
1/2 tsp. baking soda
1/2 tsp. baking powder
1/2 tsp. salt
1/2 tsp. cinnamon
1/4 tsp. ground nutmeg
Directions
1. Preheat oven to 350 degrees. Grease bread pan. (I used a smaller pans, which are about 6×3 inches, but this batter should be enough for a single 8 x 4 inch loaf pan. Your loaf pan should be filled up to 2/3 full — no more.)
2. Cream together the sugar and oil. Add the egg.
3. Add the pears, pecans and vanilla to the mix.
4. In a separate bowl, mix together the dry ingredients. Then, add to the batter.
5. Bake in oven for 45 minutes. I did check mine around 35 minutes for smaller loaf pans, which were done faster, but my 6×3 pan did need 45 minutes to bake. A larger pan may need a full hour, so do a toothpick test to see if it comes out clean after pressing it in the the baked bread.)
6. Let sit in pan for 10 minutes after and then transfer to a wire rack to let cool completely.
This bread made our house smell amazing.
