If you’re looking for a corn dog fix, this is a simple one. We made this a lot growing up. It’s nice because you don’t have to fry anything up. Less mess!

You can make your basic corn bread recipe. I usually always make mine from scratch, which includes flour, corn meal, sugar, salt, oil, eggs, milk, baking powder and some oil. If you want to make things easy on yourself, opt for a ready-made mix.

I used Jiffy mix for this recipe, and it works in a pinch. Plus, it’s only 50 cents for a box that will yield you six muffins.

Make your mix as directed. Then, cut up your hot dogs into thirds. You’ll spoon your batter into your greased muffin tin or liner. You want just enough to cover the bottom but not fill the whole thing. Thing, place your hot dog, along the bottom. After that, fill the muffin with the remainder of your mix.

Bake in the oven as directed for the muffins.
