It’s tough to stray from my father’s fantastic pancake recipe, but I think I found my favorite alternative: the whole wheat pancake.

OK, so pancakes can never truly be healthy, but this recipe offers syrup-laden perfection—with a little bit of fiber.

Change up your breakfast tradition by trying out this tasty variation.

WHOLE WHEAT PANCAKES

Prep time: 15 minutes

Cook time: 20 minutes

Serves 2 people

Ingredients

  • ½ cup whole wheat flour
  • 1/3 cup all-purpose flour
  • ¼ cup oats
  • 1 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • 2 tablespoons brown sugar
  • 1 teaspoon salt
  • 5 tablespoons unsalted butter
  • 2 ½ cups buttermilk
  • 2 eggs, beaten
  • Non-stick cooking spray

Directions

1. In large bowl, combine flours, oats, baking powder, brown sugar and salt.

2. Cut butter into small cubes with knife. Add butter into flour mixture. Mix until becomes sand-like consistency.

3. Make a well in center of flour mixture. Add buttermilk and eggs in well. Do not over-stir. You should always have some lumps in your batter.

4. Grease frying pan with cooking spray. Heat frying pan to medium heat or about 375 degrees.

5. Ladle batter onto surface to form 4-inch pancakes. Once bubbles form on the top, flip the pancakes over. Cook on second side for about 2 minutes or until golden brown.

Note

First pancakes usually never look perfect based on how the surface sticks to the pancake.

Tip

  • Try adding some milled or whole flax seed to the mix. It’s a simple way to add fiber to your diet.
  • Feel free to change any of these recipes by adding additional spices, maple syrup or fruit into the batter.
  • Remember that when you add liquids to the batter, you should probably add a little bit of flour to balance the batter consistency.
