Despite my Asian heritage, my family cannot get enough Mexican food.
One of my dad’s favorite dishes is my mom’s quick burrito recipe.
She’ll make gobs of these, freeze ‘em, and then we’ll pop them in the microwave whenever we’re in need of a quick meal.
I love these grab-n-go burritos, especially at lunch.
15-MINUTE BURRITOS
Ingredients
- 1/2 pound ground turkey, chicken or beef
- 1/4 cup onions, diced
- 1/2 cup thinly sliced potatoes
- 1/4 cup water
- 2 (12 ounce) cans low-fat refried beans
- 1 (12 ounce) package of grated mild cheddar cheese
- 12 tortillas
- Toothpicks
Directions
1. Brown meat in large skillet over medium heat. Drain excess grease from pan.
2. Add potatoes, onions and water for five minutes or until cooked through. Set meat and potato mix aside.
3. Lay out tortillas on clean table surface.
4. Add 1/3 cup refried beans to each tortilla. Take meat and potato mix and add 1/4 cup to tortilla. Top off with 1/4 cup cheese.
5. Thread top of burrito with two toothpicks. This will hold the burritos’ shape while in the freezer.
6. Wrap burritos in plastic wrap, aluminum foil or storage container. When reheating, cook for about 4 minutes.
Tips
- These burritos are great to freeze. Wrap in plastic wrap. Freeze. Should last up to 3 months.
- I recently discovered a tasty taco-like soybean “meat” at the grocery store the other day. There is no harm when opting into a meatless dish.
- When cooking your meat, you can also add pepper, salt or taco seasoning to taste.
