When it comes to comfort food, nothing brings me bigger joy than the tamale.

But as I soon discovered, these meat-and-corn filled husks are not easy to whip up.

Not that I wouldn’t want to take the steps to get to steamed-to-perfection bliss, but I opted for the advice of some of my favorite cooks.
