Here’s today’s dish, inspired by Glee’s fair-haired Cheerio Brittney S. Pierce, also known as actress Heather Morris.
Heather says she loves to make chocolate covered peanut butter bals. And boy, these treats are delicious. But for us true buckeyes, why not take the time and make these cookies into actual peanut-butter buckeyes. Here’s the steps for both versions. Enjoy!
CHOCOLATE-COVERED PEANUT BUTTER BALLS
Ingredients
1 1/2 cups of peanut butter
1 cup of butter, softened
1/2 teaspoon of vanilla
6 cups of powdered sugar
4 cups of semisweet chocolate chips
wax paper
Directions
1. Line one or two large cookie sheets with wax paper. Set aside.
2. In a large bowl, mix peanut butter, butter and vanilla. Gradually add the powdered sugar. I suggest you do this with the aid of a hand or stand-alone mixer, using a dough blade.
3. Using your hands, roll the dough into one-inch balls. Place on wax paper-lined cookie sheet. Chill in the freezer for 30 minutes or until hardened.
4. Melt chocolate chips for two minutes in the microwave. Stir the mix halfway through. Don’t overcook. Continue stirring until smooth.
5. Dip your the chilled peanut butter balls into the chocolate mix. Put back on wax paper. Refrigerate until chocolate hardens. Then, serve.
PEANUT BUTTER BUCKEYES
Directions
1. Follow steps one and two for the chocolate-covered peanut butter balls.
2. Roll dough between your hands, shaping dough into one-inch balls. Before you chill the peanut butter balls in the freezer, push a toothpick through the top center of the ball. Then chill them in the freezer for 30 minutes.
3. Melt chocolate chips for two minutes in the microwave. Stir the mix halfway through. Don’t overcook. Continue stirring until smooth.
4. With the toothpick, dip your the chilled peanut butter balls into the chocolate mix. You’ll want to leave the top of the ball without chocolate–hence, an opening like an eye. You can remove the toothpick or keep it. I find it’ll be easier to serve people, like an hors d’oeuvre. Put back on wax paper. Refrigerate until chocolate hardens. Then, serve.
Yields: About 80 peanut butter balls.
